2 Ridiculously Easy Pizza Recipes

Every day is a good day to have pizza, but this time of year is especially fitting for comfort food. And what better way to enjoy some comfort food than with 2 ridiculously easy gluten-free dairy-free pizza recipes? I introduce to you: my white pizza, and beef and pepperoni pizza recipes.

These pizzas are mouth-watering perfection, and everyone I’ve ever made them for has loved them. The best part is they’re super easy to make because I use a cauliflower pizza crust, which also makes them healthier than your average pizza, gluten-free, and dairy-free. (Of course you can make them on any pizza dough you want; they’ll be just as good.) I like the brands Caulipower and Green Giant for my cauliflower crust, and both brands have 2 crusts in the box that are the same size as a small or individual pizza.

I also use ground beef in both of these recipes (though you can simply omit it on the white one to create a vegetarian option), and I always get all my beef and steak products from the brand Piedmontese. 1. White Pizza:

Ingredients* & Instructions:



*I use the brand Cabot for cheese because it is naturally lactose-free. However, you may substitute any other dairy-free cheese.

WHAT YOU’LL NEED:

  • 3/4 cup diced onion
  • 1/4 cup olive oil
  • 1 cup dairy-free/vegan butter (I use SmartBalance)
  • 1-2 tbs minced garlic (use 1 tbs if you’re not a huge fan of garlic, use 2 tbs if you are)
  • 6 oz Cabot Pepper Jack cheese, thinly sliced
  • 2 oz Cabot Seriously Sharp cheddar cheese, thinly sliced
  • 1/4 cup banana peppers (may add more or less, and may use hot or mild)
  • .5 oz sliced black olives
  • 1/2 lb ground beef*; cooked in skillet and lightly seasoned with salt, pepper, and cayenne pepper
  • 1 cauliflower pizza crust

*Omit for vegetarian option.

HOW-TO:

  1. For the sauce:
    • Combine 1/2 cup diced onion, olive oil, butter, and minced garlic in small pot and place on stovetop over low-medium heat until liquefied.
      • Note: butter needs to be completely melted.
    • Once everything is liquefied and butter is completely melted, turn heat on low to keep warm.
  2. Remove cauliflower crust from freezer, and place on oven-safe baking tray to prevent spillage in oven.
  3. With a vented spoon, scoop out sauce from pan and spread evenly on crust.
    • Note: be sure to strain some of the oil through spoon to prevent smoking in the oven.
  4. Spread cheese evenly on top of crust with sauce, then add banana peppers, ground beef, onion, and black olives.
  5. Bake for 12-15 minutes or desired temp in oven at 425°F. Once done, remove and let cool for 2-5 minutes. Cut into slices, serve and enjoy.

2. Beef and Pepperoni Pizza:

WHAT YOU’LL NEED:

  • 1/2 cup tomato sauce
  • 11 slices of pepperoni (may add more or less)
  • .5 oz black olives
  • 1/4 cup diced onion
  • 5 oz goat cheese
  • 1/2 lb ground beef; cooked in skillet and lightly seasoned with salt, pepper, and cayenne pepper
  • 1 cauliflower pizza crust

HOW-TO:

  1. Coat cauliflower crust evenly with tomato sauce, then add pepperoni evenly on top, followed by ground beef.
  2. Crumble goat cheese on top of crust, then sprinkle onion and black olives evenly across pizza.
  3. Bake for 12-15 minutes or desired temp in oven at 425°F. Remove and let cool for 2-5 minutes. Cut into slices, serve and enjoy.
