The Most Delicious and Filling Tuna Fish Rice Bowl

No matter how much you enjoy cooking, sometimes you just need something that’s quick and easy. But contrary to popular opinion, a quick and easy recipe doesn’t (nor should it) mean that you have to sacrifice flavor and satiety. My OG tuna fish rice bowl is one of those recipes—it’s delicious, filling, and so simple to make. Plus, it’s healthy, and has good sources of fiber. It’s a well-rounded meal that is so good.

I’ve been making this rice bowl for years, and it’s never failed me. It’s perfect for lunch or dinner (or breakfast if you want; I will certainly not judge) and good year-round. Keep on reading to learn how to make the tried and true recipe, and try it out yourself.


Tuna Fish Rice Bowl:

Ingredients:



WHAT YOU’LL NEED:

  • 1 can of white light chunk tuna fish in water
  • Mayonnaise
  • Rice
  • 1 can of corn
  • 1 can of black beans
  • 1 avocado
  • Banana peppers or jalapeños (use mild banana peppers if tolerance for spiciness is low)
  • SmartBalance imitation butter (substitute Earth Balance)
  • Crushed red pepper flakes

OPTIONAL ADDITIONS:

  • Broccoli
  • Broccoli rabe (my favorite)
  • Green beans

Instructions:



TUNA FISH DIRECTIONS:

  1. Safely remove lid from can of tuna fish and squeeze out excess water so tuna is dry.
  2. Remove tuna from can and place in a separate bowl.
  3. Add in desired amount of mayonnaise and mix well.
    1. Tip: less is more!

HOW-TO:

  1. After tuna is mixed, begin working on the rest of the bowl starting with the rice.
  2. Follow directions to cook rice. While rice is cooking, cut up avocado as neatly as possible into slices.
    1. Once rice is done, remove from hot surface and cover immediately.
  3. Drain corn and black beans from can, place together in microwave safe bowl, and cook in microwave for 1 minute and 30 seconds on high to create a corn and black bean salsa.
    1. Note: microwave times may vary, so cook accordingly.
  4. Immediately remove corn and black bean salsa from microwave and drop 1-2 tbsp of SmartBalance in. Mix well.
  5. Place desired amount of rice into bowl with tuna fish and add an additional tbsp of SmartBalance.
  6. Add in corn and black bean salsa.
    1. Note: make sure the portion is smaller than the rice!
    2. If adding in any greens: now is the time to do it.
  7. Cover bowl and heat up in microwave on high for 30 seconds-1 minute.
  8. Add 1/2 of avocado slices into bowl.
    1. Note: you may add more if you like!
  9. Add in desired amount of banana peppers or jalapeños.
  10. Sprinkle crushed red pepper flakes throughout bowl and enjoy!

    This recipe is absolutely delicious. I have made it a number of times, and it is always a hit! Great for nights when you forget to take something out of the freezer ahead of time to thaw.
