Recipes: Arianna’s Easy Homemade Tacos

If there’s one thing almost everyone in the world can agree on, it’s that tacos are always a good idea. Now, Flawless World’s creator, Arianna, is sharing her full easy homemade taco recipe. This recipe is gluten-free and dairy-free (though you can substitute gluten and dairy filled products if you want), and can be made by every cooking skill level.

Arianna’s Note:

I use the Piedmontese 96% lean ground beef for my tacos. If you’re a major foodie and want naturally lean, grass-fed meat that isn’t dry and is tasty AF, I highly recommend giving their products a try. Ingredients:



WHAT YOU’LL NEED:

  • 1 lb Piedmontese 96% lean ground beef*
  • SmartBalance imitation butter
  • Mission gluten-free wraps
  • 1 avocado
  • 1 large onion or 3-4 small onions, finely chopped**
  • Dairy-free sour cream
  • Hot salsa
  • Dairy-free cheddar or mozzarella shredded cheese
  • Rice
  • 1 can of black beans
  • 1 can of corn
  • 1 1/2 tsp cayenne pepper
  • Ground black pepper
  • Sea salt
  • Large skillet
  • Non-stick cooking spray

*May substitute 1 lb of shrimp or chicken.

**Smaller onions go by your personal preference.

OPTIONAL ADDITIONS:

  • Shredded lettuce
  • Cilantro

Instructions:



PREP:

  1. Start by cooking rice first according to directions. Make sure it doesn’t overcook.
  2. While rice is cooking, finely chop onions and slice 1 avocado and set aside.
  3. Once rice is done cooking, cover immediately and remove from burner if cooking on stove.
  4. Drain 1 can of corn and 1 can of black beans. Combine in microwave-safe bowl, cover, and heat up in microwave for 1 minute-1:30 seconds. Add in 2 tsps of SmartBalance, stir, and cover.
  5. Begin working on ground beef.

FOR THE GROUND BEEF:

  1. Spray a large skillet with non-stick cooking spray.
  2. Heat up skillet on stovetop on high and add in onions and ground beef.
  3. Pour 1 tsp of cayenne pepper onto ground beef, and sprinkle in salt and black pepper to taste.
  4. Begin breaking up ground beef with spatula. Stir around onions to let flavor sink in.
  5. As ground beef begins to cook, flip over onto other side.
  6. Sprinkle in 1/2 tsp of cayenne pepper, desired amount of black pepper and salt to taste onto side of ground beef that hasn’t been seasoned yet.
  7. Mix ingredients around together in skillet. Continue to do so until ground beef has been cooked to your desired liking. It should be cooked fully through but not overcooked. (I like medium-medium-well.) Turn off burner, remove skillet from burner, cover, and set aside.
    1. Note: if you need to make things move along faster, cover skillet to cook ground beef quicker.

FOR THE TORTILLAS:

  1. Take either a large, medium, or small skillet (your preference and what’s available to you), and drop in 1 tsp of SmartBalance. Place on stovetop and heat on high.
  2. Once butter’s melted, add in gluten-free tortilla. Tortilla should bubble up; press down on bubbles gently with a spatula. Reduce heat to medium. Flip tortilla over. Wait 15-30 seconds, then flip over again. Continue to do so until both sides are at least golden brown, or one side is a slightly darker brown than the other. Tortillas should be crispy but not hard.
  3. Repeat process until 4-6 tortillas have been made.

FOR THE TACOS:

  1. Begin by layering tortillas first with rice, then corn and black bean salsa. Try to do this as evenly as possible; the thinner the line is, the easier it will be to fold tortilla and prevent ingredients spilling out from taco while eating.
  2. Spread ground beef and onions on top evenly.
  3. Add desired amount of avocado slices on side.
  4. Place desired amount of sour cream on top of ground beef, followed by desired amount of salsa. Add in any other desired toppings.
  5. Top with dairy-free shredded cheese and enjoy!
